From midsummer until late autumn, Belarus village houses and city apartments are turning into pickle jar manufactures, and the smell of dill, emerald leaves and vinegar spreads everywhere. In families, recipes, technologies, and rolling devices for this activity are passed on from generation to generation.
When two women in Belarus meet in autumn, they have a tradition to discuss and compare how much vegetables, berries and fruits they have pickled throughout the year.
– «Я закатала сто літраў». “I pickled 100 litres”
– «Я закатала у гэтым годзе толькі пяцьдзясят літраў» “I pickled only 50 litres this year”
A recipe tips from one grandma “How to pickle cucumbers to make them crunchy?“
Pick the right greens! According to the recipe, you will need (per 1 jar): *Cherry leaves - 5 pieces. *Umbrella of dill - 2 pieces. *Garlic - 4 large cloves. *Horseradish leaf - 1 piece. *Horseradish root - 2-3 shavings. And the main ingredient responsible for crunching cucumbers are oak leaves. You can't find them on markets, so you will need to pick them on your own. These leaves will give cucumbers unique crunch and they will not go soft even after a prolonged storage.
